Nan Khatai is a popular Indian tea biscuit and eggless cookie . I made them for Diwali and i changed it up a bit of half dough by adding cocoa powder and turning them into CHOCOLATE NAN KHATAIS.Hope you love them.....
Ingredients:
2 cups maida (all purpose flour)
1/4 cup semolina / sooji
1 tbsp besan (gram flour)
1 tbsp cocoa powder
2 tbsps curd
1/4 tsp baking soda
1 1/4 cups sugar
1/2 tsp vanilla essence
3/4 cup ghee or oil
few almonds or pistas or cashews
Method:
1: Pre heat the oven to 375 degrees.
2: In a bowl, mix maida, gram flour, sooji, baking soda and set aside.
3: Blend sugar, ghee or oil, vanilla essence and yogurt till smooth. Its important you really combine well.
4: Add the flour mix to ghee-sugar mixture and knead them together to make smooth dough. The dough should be kneaded well for at least 7-8 minutes. If the dough is not stiff enough to roll out into balls, add a few tbsps of cold milk and chill for a few minutes.
5: Add cocoa powder to the dough and knead till its well combined, add a little milk if required. Pinch dough and shape into small balls and slightly flatten. Garnish with almonds or pista or cashews by slightly pressing into the dough.
6: Put on a lightly greased cookie sheet or tray and bake at 375 degrees for about 13 to 15 minutes or until lightly gold brown.
7: After they are lightly golden brown remove the cookie sheet from the oven. Let the Nan Khatais cool down for two to three minutes and the cookies will harden.
8: Yummy Chocolate Nan Khatais are ready.......store in airtight container.Ingredients:

Variation:
1: Divide dough into 2 parts, in one part add cocoa powder mix well and make into different shapes. See the pics below......
