Noodle chaat

Noodle chat recipe is an innovative way of making the noodles more appetizing and yummy.  This recipe is one of the experiments in my kitchen. Hope you will love the yummy noodle chaat.


Ingredients:

1chunk noodles, i used hakka noodles
1 onion, finely chopped
2 tomatoes, finely chopped
1 potato - boiled, peeled and cut into cubes
1 tsp red chilli powder
1 tsp chaat masala
lemon juice
salt to taste
oil to deep fry

For garnishing:

1/4 cup finely chopped onions
1/4 cup finely chopped tomatoes
coriander leaves, finely chopped
bombay sev or thin sev

Method:

1: Boil the noodles in salted water according to packet instructions until cooked.   Make sure you don’t overcook them. Drain, pour 1 tsp of oil over it and toss the noodles. This ensures that the noodles don’t stick.

2: Heat oil and deep fry the drained noodles in batches until crispy, golden in colour. Remove on a kitchen towel.

3: In a large bowl, break fried noodles in small pieces and add tomatoes, onions, potatoes, chaat masala, red chilli powder, salt, lemon juice and mix well.

4:  Serve it in a bowl or plate, garnish with tomatoes, onions, thin sev, coriander leaves and serve immediately.

American Chopsuey


American Chopsuey is a delightful preparation of crispy noodles served with vegetables and tangy sauce. It is one of the most common recipe on the chinese restaurants in India. In my college days, my aunt prepared this recipe and i learned from her.After that i prepared few times and now after my marriage, this is the 1st time i prepared and my hubby enjoyed a lot. Hope you too enjoy!

Ingredients:

1 chunk maggie noodles (i used hakka noodles)
1/2 cup onion slices
1/4 cup capsicum
1/4 cup cabbage
1/4 cup beans
1/4 cup carrot
1/2 tsp garlic paste
1 tsp ginger paste
3 tbsps tomato ketchup
1/2 tsp soya sauce
1/2 tsp chilli sauce or 1 green chilli paste
1/4 tsp red chilli powder
1 tbsp corn flour, mix in 1 cup of water
salt to taste
oil

Method:

1: Chop all vegetables into thin strips.

2: Boil the noodles in salted water according to packet instructions until cooked. Make sure you don’t overcook them. Drain, pour 1 tsp of oil over it and toss the noodles. This ensures that the noodles don’t stick.

3: Heat oil and deep fry the drained noodles in batches until crispy, golden in colour. Remove on a kitchen towel.

For the sauce:

4: Heat oil in a pan, add onions and saute for 1 minute. Now add capsicum, cabbage, beans and carrots, salt and stir constantly for 5 mins until they seem only 75% cooked.

5: Add garlic, ginger and chilli sauce/chilli. Stir for 30 secs. Then add soya sauce, tomato sauce, corn flour mixture and stir continuously till the sauce becomes thick. Add water to thin the sauce according to the consistency desired.

6: To serve the chopsuey, place crispy noodles in a serving bowl (or deep plate). Pour the hot chopsuey sauce over it. Serve immediately.
