Nan Khatai

Nan Khatai is an eggless light and crispy biscuit that's delight perfect to serve with tea or coffee. The cookies are really simple and easy to bake and perfect in taste. Nan khatai make a great homemade gift for holidays. Your friends and relatives will love it. So here's a super easy & quick recipe...


Ingredients:

2 cups maida (all purpose flour)
1/4  cup semolina / sooji
1 tbsp besan (gram flour)
2 tbsps curd
1/4 tsp baking soda
1/2 tsp cardamom powder
1 1/4 cups sugar
3/4 cup ghee or oil

Method:

1:  Pre heat the oven to 375 degree.

2:In a bowl, mix maida, gram flour, sooji, baking soda and cardamom powder and set aside.

3:  Add ghee or oil, yogurt  and sugar in a mixing bowl and beat for two to three minutes until light and fluffy. Its important you really combine well.

4: Add the flour mix to ghee-sugar mixture and knead them together to make smooth dough. The dough should be kneaded well for at least 7-8 minutes.


5: Pinch dough and shape into small balls and slightly flatten. Garnish with almonds or pista or cashews by slightly pressing into the dough.

6: Put Nan khatai on a lightly greased cookie sheet and bake at 375 degrees for about 13 to 15 minutes or until Nan khatai are lightly gold brown.

7: After they are lightly golden brown remove the cookie sheet from the oven.  Let the Nan Khatais cool down for two to three minutes before taking them off the cookie sheet.


8:  Store in airtight container and enjoy with your evening cup of CHAI!!!!!!!

Note:

1: Nan Khatais expand A LOT when in the oven, so don’t make the balls too big and leave sufficient space between nan khatais on cookie sheet.

yes, you can make in the bati oven also. Recipe follows the same for both, while baking in the bati oven, check the cookies now and then to avoid overbaking....
