Green bean is a high protein food. For curry, bean must be cooked with other vegetable. It goes well with potato. Todays recipe is prepared with ordinary ingredients in a simple and delicious manner. This curry goes well with roti, chapati, rice etc....
Ingredients:
3 cups chopped french beans
2 potatoes, peeled and chopped into small cubes
1 onion, finely chopped (optional)
2 tbsps oil
3-4 gloves of garlic, finely minced (optional)
1/2 tsp mustard seeds
1/2 tsp cumin seeds
pinch of hing
few curry leaves
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
2 tsps lemon juice
coriander leaves, finely chopped
Method:
1: Heat oil in a pan,add mustard seeds, cumin seeds, hing, curry leaves, garlic and saute for few seconds. Now add onions, and fry for 5 minutes.
2: Now add turmeric powder, potatoes, beans, salt, mix all together, add 1/2 cup of water, cover the lid and cook till beans and potato is done.
3: Then add red chilli powder, coriander powder, lemon juice and saute for few seconds.
4: Garnish with coriander leaves and serve hot with chapati or rice.
